Why Jamaican and Chinese Fusion

The idea for Jamaican + Chinese fusion came from the founders’ love of both cuisines. Jamaican food—with its rich spices, smoky depth, and vibrant character—perfectly complements the balance, freshness, and versatility of Chinese cooking.

Chef Marcus Johnson – Head Chef

With over 15 years of experience in Caribbean and Asian cuisine, Chef Marcus is the creative mind behind Henrica’s signature fusion dishes. Born in Kingston, Jamaica, and trained in international kitchens, he brings bold flavors, authentic techniques, and innovative twists to every plate. His passion is to tell stories through food—mixing tradition with fresh creativity.
